This kind of literature is called a “lipogram”. A famous modern example is the novel La Disparition by Georges Perec, which does not use the letter ‘e’, the commonest letter in both English and French. Perhaps even more amazing is the English translation of Perec’s novel, titled A Void, which also eschews ‘e’.
